Cake Master Class

For whom

  • Designed for beginner and intermediate bakers with prior cake-making experience.
  • You’ll be guided through cake baking, perfect buttercream (Swiss Meringue Buttercream)and filling, piping and decorating techniques including basic fondant making. Feel free to reach out if there are specific areas you’d like to focus on for a customized design / curriculum.

Hours / Sessions / Cost

  • 4-day intensive / 12+ hours total 
    • Sessions can be spaced out, but we recommend taking them back-to-back for the best learning experience
  • This class is a hands-on private session with 1:1 guidance.
  • Q&A session through emails will be provided after the class
  • Price: $1,850
    Weekday (Mon-Fri) sessions are offered at a discounted rate of $1,650

What you will learn

Day 1 – Foundations

  • Cake baking fundamentals
  • (Recipes provided with flavor variations)
  • Perfect Swiss meringue buttercream: texture, stability, and consistency
  • Buttercream color theory
    • Oil-based vs gel-based coloring
    • Mixing muted and pastel tones


Day 2 – Structure & Vintage Basics

  • Vintage piping techniques (practice session)
  • Character piping
  • Cake slicing, filling, and crumb coating
  • Marking and mapping a cake for piping guides
  • Complete a 6 inch round cake


Day 3 – Character & Decorative Details

  • Fondant character shaping
  • Advanced vintage piping practice
  • Decorative elements: bows, pearls, cherries and finishing details
  • Complete a 6 inch vintage heart cake


Day 4 – Design & Final Project

  • Cake design planning and concept development
  • Applying learned techniques to a cohesive design
  • How to stack a tiered cake (4''+6'')
  • Completing a tiered cake using skills learned throughout the course
  • Q&A / Wrap-up

  • Recipes and all the information of ingredients & tools
  • Completed cakes after Day 2, 3, 4

  • Basic skills / knowledge of cake baking & decorating
  • All tools/ingredients/packaging materials/apron will be provided

  • We require at least 14 calendar days' prior notice for all cancellation or change of date requests. If you notify us about your cancellation/change of date request within 14 days of your class, we cannot offer you a full refund or guarantee changes.
